The Queen of Italy (Margherita)
Beer pairing: Gold Cup
Joining today’s line up is a firm favourite for when the going is soft to firm.
A crisp firm base, tomato reduction saddled with our fine soft Italian mozzarella.
In 1849 Emanuele Rocco recorded different pizza toppings like basil, tomatoes, thin slices of mozzarella, and parmesan cheese. The mozzarella was thinly sliced, and arranged with a flower-shape over the tomato sauce, along with the basil leaves. This may be the real origin of the name Margherita, meaning daisy.
